Ideas for Sunday dinner

While reading the blog Down Home Soul Food Cooking, I came across the following recipie that reminded me of a meal I cooked a while back:

Slimmed Down Red Beans And Rice

(I’m linking to this site because I really hope he doesn’t quit with this concept for a blog–I did not see any postings for May)

The recipie I used was similar to this MINUS the pork or ham hock.

I also made some jerk chicken (on the grill) to go with the red beans and rice.

Oh yeah…I also made some cornbread (the recipie I used included a can of creamed corn).

hmmm…83 degrees today….86 degrees tomorrow? Sounds like grillin’ time to me :)

    Chicken wings

    1 large onion

    1 large green bell pepper

    1 large red bell pepper

    2 large lemons

    Cut the veggies into large wedges. Season (salt, pepper, garlic powder, and paparika)to taste and put in the oven covered until done. Simple easy done in a flash.

  2. I recently bought Mama Dip’s Family Cookbook. The author is a 70-something year old black woman who has gained national exposure in recent years. I recommend the cookbook for her mini autobioigraphy alone–very inspirational. The book is full of simple, healthy recipes that don’t require any exotic ingredients. This is the best cookbook that I own, and it has several recipes that would make an awesome Sunday dinner. (One of my personal favorites is the Baked Apples.)
